Creamy Chicken Wine And Pine
Something dreamt up whilst walking the dogs one hot summers day, and wanting something light for tea.
Ingredients
- 1 onion, chopped
- 2 garlic cloves, crushed
- 100ml sweet white wine (no, not a beer, dear)
- 300g chicken breast, diced
- 200g creme fraiche
- 1 tsp demerara sugar
- 1/2 tsp paprika
- 150g closed cup mushrooms, sliced
- 50g pine nuts
- 20g chives, choped into 10mm legnths
- 10g curly parlsey leaves, roughly chopped
Method
- Sweat the onion and garlic in a covered pan for 10 minutes. Remove the lid and cook for 5 miuntes more until softened.
- Add the wine and reduce to half.
- Add the chicken and fry briefly until sealed.
- Tip in the creme fraiche, sugar paprika and mushrooms. Mix well, cover and simmer for 20 minutes.
- In a seperate pan, dry fry the pine nuts until brown and fragrant. Swirl and toss the pan frequently to ensure they are browned on all sides.
- Stir in the pine nuts along with the chives and parsley and cook for a minute more.
Serve with pasta.
