Cowboy Stew
There's loads of this. Will probably serve 4.
Ingredients
- 12 chippolatas sliced into quarters
- 1 onion, diced
- 2 garlic gloves, crushed
- 1 1/2 tsp smoked paprika
- 1 can baked beans
- 1 can black beans
- 1 can of chopped tomatoes
Method
- Fry the chippolatas for 10 minutes.
- Add the onion and fry for a further 10-15 minutes until golden.
- Turn down the heat and add the garlic and paprika. Fry gently for 2 minutes, stirring continuously.
- Add the beans and tomatoes. Bring to the boil then simmer for 20 minutes.
Eat on its own or serve with baked potatoes, chunks of bread...
