Cowboy Stew

There's loads of this. Will probably serve 4.

Ingredients

  • 12 chippolatas sliced into quarters
  • 1 onion, diced
  • 2 garlic gloves, crushed
  • 1 1/2 tsp smoked paprika
  • 1 can baked beans
  • 1 can black beans
  • 1 can of chopped tomatoes

Method

  1. Fry the chippolatas for 10 minutes.
  2. Add the onion and fry for a further 10-15 minutes until golden.
  3. Turn down the heat and add the garlic and paprika. Fry gently for 2 minutes, stirring continuously.
  4. Add the beans and tomatoes. Bring to the boil then simmer for 20 minutes.

Eat on its own or serve with baked potatoes, chunks of bread...
