Beef And Pineapple Curry
I use pineapple rings in this, as I find pre-diced pineapple chunks too big. I prefer to chop rings into smaller chunks.
- 1 onion, chopped
Moderate heat: fry for 10-15 minutes until golden.
- 2 garlic cloves, crushed
- 10g ginger, chopped
- 1/2 tsp dried chilli flakes
- 1 tsp coriander, ground
- 1 tsp cumin, ground
- 1 tsp turmeric, ground
- 1 1/2 tsp paprika
- 1 1/2 tsp fennel Seeds
Low heat: cook gently for 2 minutes, stirring all the time.
- 300g beef, diced
High heat: fry until sealed.
- 250ml cocounut cream, thick
- 435g tin pineapple rings in juice, sliced into chunks.
Bring to the boil, then simmer for 30 mins until the beef is tender and the sauce has thickened.
Serve with rice.
