Pork Goulash Thingy
This may or may not have any relation to a real pork goulash. It's a good winter warmer though.
Ingredients
- 1 onion, diced
- 1/2 tsp dried chilli flakes
- 2 tsp paprika
- 1/4 tsp peppercorns, ground
- 3 garlic gloves, crushed
- 300g pork, diced
- 2/3 can of chopped tomatoes
- 4 bay leaves
- 1 can of chick peas
- 1 tsp of mixed herbs
- 150ml plain yoghurt
Method
- Fry the onion gently for 10-15 minutes until golden.
- Turn down the heat and add the chillis, paprika, pepper and garlic. Fry gently for 1 minute, stirring continuously.
- Add the pork and fry until sealed.
- Tip in the tomatos. Add the bay leaves and mixed herbs.
- Tip in the yoghurt and stir well. It will probably curdle, but that will come out with cooking. Simmer for 30 minutes.
Serve with rice.
