Coriander and Lime Rice

This goes well with many milder, creamy curries

Ingredients

  • 150g basmati rice
  • 1 handful of fresh coriander, chopped
  • zest and juice of 1 lime (or 2 tbsp lime juice)

Method

  1. Cook the rice according to your prefered method. Whilst cooking, chop the coriandor, grate the lime zest and squeeze the juice out of the lime. When the rice is done, drain and add the coriander, lime zest and lime juice. Mix well.
