Curd Tart
Ingredients
Biscuit Base
- 200g biscuit crumbs
- 80g margarine, melted
Curd
- 85g margarine
- 100g sugar
- 2 large eggs
- 2 large egg yolks
- 200ml fruit juice
Topping
Dark chocolate
Method
Biscuit Base
- Melt the margarine then stir in the biscuit crumbs. Tip into a pie dish, press down firmly and place in the fridge to set.
Curd
- Beat the margarine and sugar for about 2 minutes until well mixed and fluffy.
- Add the eggs and yolks and beat for a further minute. Mix in the fruit juice.
- Tip the mixture into a pan. Cook over a low heat until it is smooth. Increase the heat and cook for 15 minutes with out boiling until it thickens.
Tart
- Take the base out of the fridge, tip in the curd and smooth it out.
- Using a fine grater, grate a thin layer of dark chocolate over the top.
- Place back in the fridge until thoroughly cooled and set.
