Curd Tart

Ingredients

Biscuit Base

  • 200g biscuit crumbs
  • 80g margarine, melted

Curd

  • 85g margarine
  • 100g sugar
  • 2 large eggs
  • 2 large egg yolks
  • 200ml fruit juice

Topping

Dark chocolate

Method

Biscuit Base

  1. Melt the margarine then stir in the biscuit crumbs. Tip into a pie dish, press down firmly and place in the fridge to set.

Curd

  1. Beat the margarine and sugar for about 2 minutes until well mixed and fluffy.
  2. Add the eggs and yolks and beat for a further minute. Mix in the fruit juice.
  3. Tip the mixture into a pan. Cook over a low heat until it is smooth. Increase the heat and cook for 15 minutes with out boiling until it thickens.

Tart

  1. Take the base out of the fridge, tip in the curd and smooth it out.
  2. Using a fine grater, grate a thin layer of dark chocolate over the top.
  3. Place back in the fridge until thoroughly cooled and set.
