Banana Bread
Pre-heat the oven to Gas Mark 4 / 180°C and lightly grease a bread tin. * 3 (350g) large bananas
Mash with a fork & reserve. * 2 large eggs Beat in a large mixing bowl. * 1/2 cup (115ml) vegetable oil * 1 cup (200g) demerara sugar Add to the mixing bowl along with the bananas. Stir well until fully mixed together. * 2 cups (240g) plain white flour * 1 tsp vanilla extract * 1 tsp baking soda * 1 tsp baking poweder * 1/2 tsp salt Add to the mixing bowl. Stir well until fully mixed together.
Pour the batter into the bread tin and bake in the oven for 80 minutes, until dark brown and cooked through.
