Banana and Pineapple Cake

This was a recipe by Carol on Allrecipes.co.uk, which was closed in Novemeber 2021 and all recipes on the site were deleted. I have reproduced it here for prosterity.

Ingredients

  • 375g plain flour
  • 400g caster sugar
  • 1 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 3 eggs
  • 250ml vegetable oil
  • 450g banana, coarsely chopped
  • 1 432g tin crushed pineapple drained; reserve 1 tbsp of juice.

Method

  1. Preheat oven to 180 C / Gas 4. and grease a 26cm cake tine.
  2. Mix the flour, sugar, bicarbonate of soda, cinnamon and salt together in a bowl.
  3. Make a well in the middle and add the eggs, oil, bananas and pinapple and tablespoon of juice. Mix in.
  4. Bake for 70-80 minutes. Cool in the tin for 10 minutes then decant onto a wire rack and cool completely.
