Salsa

Ingredients

  • 2 spring onions, sliced
  • 2 garlic gloves, crushed
  • 1/4 tsp cumin
  • 1/8 tsp chilli powder
  • 1 can chopped tomatos
  • 1 tbsp lemon juice
  • 2 tsp coriander leaf, dried
  • 1/2 tsp sugar

Method

  1. Fry the spring onions briefly until wilted.
  2. Add the garlic, cumin & chilli and fry gently for 2 minutes.
  3. Tip in the tomatos, add the lemon juice, coriander & sugar and mix well.
  4. Cook over a moderate heat, stirring occasionaly, until reduced to a thick sauce.
