Sweet And Sour Beef And Pineapple Stir Fry

I use pineapple rings in this, as I find pre-diced pineapple chunks too big. I prefer to chop rings into smaller chunks.

  • 435g tin pineapple rings in juice, sliced into chunks
  • 2 tbsp Tamari soy sauce
  • 2 tbsp lemon juice
  • 100g runny honey
  • 1/8 tsp chilli flakes

    Drain the juice from the pinapple into a jug and mix in the soy sauce, lemon juice, honey and chilli flakes. Reserve.

  • 300g beef, stir fry stips

    High heat: fry the beef until sealed. Over a moderate heat: toss in the pineapple junks and fry for 10 minutes until the beef and pineapple are nicely browned.

  • Reserved juice

    High heat: bring to the boil

  • 1 tsp cornflour, heaped, mixed in a little water

    Low heat: mix in and stir until thickened.

Serve with noodles.
